Poll...I bought thin sliced steak...how could I make this very tender?
Q. I don't know if I should bake the steak at a low temp...or fry it in a little olive oil at a high heat very quickly...which way would make the steak tender? Its very very thin slices...thank you

A. I usually buy cheap beef..i.e. it is cheaper..lol I like to use garlic and red wine to tenderize, but if you are looking for a milder flavor a little apple juice, basil, and sea salt is great. I don't know what you are using it for..so I wish I could help ya more..because you rock!

A. Sure you can get all the expensive, exotic cuts but I think a standing rib roast would work well for a more "formal" dinner. One of my favs is coffee-pepper beef. For this I use filet mignon. Brush the steaks with olive oil and minced garlic. Mix ground coffee and coarse ground black pepper in a baggie. I use three parts coffee to two parts pepper. Place steaks in bag and shake to coat. Broil or grill to desired doneness. Another would be rib eyes rubbed with Mc Cormack's Spicy Montreal Steak Rub. Twice baked potatoes would work nicely as a side dish for any of the above.

A. the dark spots are more likely to be from the labels that the meat wrappers use as info labels, like saying usda or choice beef and also they use them for sale items and when they are applied on to the plastic wrap they will leave balck spots as as wrap has very small holes ( not able to be seen with the naked eye ) and those small holes are for the meat to breath and if they are sealed shut with the lables if suffacates the meat and turns it dark in the spots that the labels were on. that would be the only way yuo'd get black spots, if the meat was dark it would be dark all over and seeing you said in spots than that is the cause, nothing harmful ,just doesn't look nice.thedark spots are on all meat not just the mock tender. meat man for… [cont.]

A. Start with a good steak. I like a fairly thick steak...T-bones are excellent, but ribeye, new york strip, or tenderloin steaks are great too. Get a good hot bed of coals going in your grill. Set your steak out and and bring it to room temperature. Season with nothing except salt and pepper. When the fire is burned down to a good hot bed of coals, you simply place your steaks on the grill and stand there and watch them while they cook. I prefer to flip them over only one time...it prevents juices from draining off. The fire may flare up and singe the steak, but that is okay because the steak is not going to be over the fire long enough to do any damage. A. though I have my favorites also...I think a top sirloin is going to be your least expensive cut that will still be tender. I have had many fine sirloins and it's a pretty good steak. Granted I too prefer a ribeye or a NYstrip.

Q. Tuesday is steak night, have to get round steak because it's the leanest (not a health issue, just because boyfriend gags on visible fat/gristle!), BUT I find round steak pretty tough. A. ask your butcher to tenderize the steak for you. Another idea could be to tenderize it yourself by bashing it out with a mallet. Or maybe find a nice BBQ marinade and marinade the steak over night. Always cook the meat slowly to keep it tender. Seal both sides as soon as you put the meat in the pan to keep the juices in.

I tenderize mine with a meat tenderizer,then cook in an iron skillet,I put sliced onions,and butter in the skillet first,then cook the steak on the onion bed.Dont cook it at too high of temperture,let the meat absorb the onion flavor ,turn over when done on first side.I cook mine on med high.I usually turn over one more time to make sure the inside is done.My boyfriend eats the fried onions,he likes them just as much as the steak.

A. There are several types you can buy. 1) Tenderloin (fillet mignon) is the most tender. For really tender fillet mignons, you don't even need to cut them with a knife... you can use a fork. Tenderloin isn't as flavorful as the other cuts. 2) Flat iron steaks are probably the second most tender, and they are very flavorful and usually a lot cheaper than fillet mignon. 3) New York Strips are also a good choice. A. You didn't specify how you like your steak cooked, rare, med rare, etc. For a med rare steak (the best choice), season both sides with your choice of seasoning. Broil on high, 4-5 mins each side, depending on thickness. Turn with tongs!! NEVER puncture the meat with a fork, it releases the juices and makes a tough piece of meat. Another tip is to remove meat from pan, then let rest for 5 minutes. This allows the meat to "finish" cooking and let the juices redistribute throughout the meat. Actually, a ribeye steak will most always come out tender, using this same technique.

is a hanging tender the same thing as a skirt steak? what is the difference?

A. they are close but not the same cut. The skirt steak is what is usually used for fajitas. Hanger or hanging tender is not. It has more of a beefy flavor and has a long line of fat through the middle. Hanging steak is cheaper but not available everywhere. I have used both and enjoyed both, however I find that the inside skirt steak is better. The hanger can be a little greasier and the beef flavor is too strong for some people. I like to buy the skirt steak with the skin on and whole. Barbque the skirt over high heat on both sides until charred then, remove the skin and finish cooking. A. I'm telling you, Montreal Steak Spice will save your life! Sprinkle it on the meat, and press it into the steak with a fork. Let it sit there for 10 minutes or so, and then grill/fry/broil. You could also mix a good amount with some barbecue sauce (or even an oil salad dressing), and marinate your steak overnight, or at least for 6 hours. The absolute best steaks are Pepper-steak's. You need to let it rest after cooking to let the proteins relax (they seize up during cooking) & the juices redisribute themselves in the meat. try this: Season with salt & pepper & olive oil & place in a hot griddle pan or fry pan that can pe placed in the oven. turn the heat down to medium & fry each side for about 3-5 minutes (depending on how you like your steak & the thickness of the cut) . Remove from the heat & place in an oven on moderate heat for 5-10 minutes. Remove the steak from the pan place on a plate & cover with foil, allow to rest in a warm place for 5 minutes.

How to cook chuck tender steak?

A. The only thing I would use chuck steak for is pot roast or stew. You would need to braise it in liquid for several hours to make it tender. I would season it, lightly flour it then brown quickly in a little oil. Slice up half an onion and some garlic and add this toward the end of the browning process. Then you could cover with beef broth or bouillon or water and lipton onion soup mix. Bring to a boil and reduce heat. simmer til tender. If you just fry the chuck steak it will be tough.

A. Ok, for starters, don't overcook it, for two reasons. One, it will be dry and it will go to waste. Two, the more you cook meat, the harder it is for your body to digest, think of overcooked meat as your body trying to digest a piece of leather, it's not easy! Once it's done cooking, let it sit on the serving platter for 10-20 minutes, covered in foil to help keep it warm. This lets the juices redistribute themselves back through the meat. And serving a sauce or marinade (that has been boiled, of course, to kill off anything bad) over the meat isn't a bad idea either!

A. You can poke it with a fork and wet it and put sprinkle on meat tenderizer on it. Then roll it in seasoned flour and fry it in shallow grease. You can marinate it in wine, vinegar, oil, water, and Italian dressing, for a couple hours and then grill it.
