Q. I have raw tender chuck steak and there are black spots on it, and I dont know if that is normal

A. the dark spots are more likely to be from the labels that the meat wrappers use as info labels, like saying usda or choice beef and also they use them for sale items and when they are applied on to the plastic wrap they will leave balck spots as as wrap has very small holes ( not able to be seen with the naked eye ) and those small holes are for the meat to breath and if they are sealed shut with the lables if suffacates the meat and turns it dark in the spots that the labels were on. that would be the only way yuo'd get black spots, if the meat was dark it would be dark all over and seeing you said in spots than that is the cause, nothing harmful ,just doesn't look nice.thedark spots are on all meat not just the mock tender. meat man for… [cont.]

Q. I am looking for a quick, easy meal that I can make with these steaks. I want to be able to taste a lot of flavor, but nothing too spicy since my dad gets heartburn pretty easy. Any recipes are appreciated! Thank You!!

A. You could marinate the steaks in worschester sauce and seasoning salt. Its not spicy at all. Makes the steaks very tasty! I would recommend grilling it though. Add some veggies or rice and it would be a tasty dinner =D

A. The chuck tender is a wonderful roast and my favorite. I always do mine in the crock pot for 4 - 6 hours on high heat, depending on the size of the roast, and it is fork tender every time. You can add whatever you and your family like. I prefer mine simple and just add about 1/4 to 1/2 cup of water, a can of mushroom soup, a package of Lipton Onion-Mushroom Soup mix, a sliced onion, and a little coarse ground pepper. I prefer my potatoes and carrots cooked separately, but that is just a personal choice. If you do not have a crockpot or simply prefer to cook your roast in the oven, these websites might give you some ideas:

can anyone tell me how to cook boneless chuck tender steak in less than 2 hours?
Q. i picked up a package of 6 small boneless chuck tender steaks because they were on sale, but i've never made them before and can't seem to find a recipe that works for me. most seem to require 12 hours of marinating, and i wanted to prepare them when i get home for dinner tonight. i can't grill them, being as i don't own a grill. does anyone have any recommendations as to how i can either bake, fry, boil, or sear them? i also have a jar of mole sauce i was hoping to incorporate into the recipe. i had read that the steaks work well if cooked in strips for fajitas. ANY ideas?? thanks in advance!

A. I would use a knife and stab the steak (it makes things earlier) season the steak with garlic salt and pepper, then prick the steak with a fork to push the seasonings into the meat. Cook over medium high and then cut into strips or bite size pieces. You can make the fajitas which sounds really good right now or use the bite size pieces add them to some rice-a-roni and veggies.

A. Serenity has a point. Saute it and bake. Or for a quicker fix, throw in a few chopped onions and seasoning, and put it right on the stove top. Takes like 10-15 mins and tastes great. Make some quick veggies and rice to go with!

A. Slowly. That's really the way to get any meat to be very tender and juicy. It just requires a good bit of patience.

what is the best way of marinating chuck steak in order to get a tender steak?

Asked by HT - Wed Jul 25 16:07:23 2007 - Cooking & Recipes - 5 Answers - Comments

A. Use a meat mallet on it or ask the butcher to tenderize it. They will do it for free. Then get a papaya based meat tenderizer and apply as directed. Place it in a Ziploc bag with as little air as possible, and let it sit 24 hours in a refrigerator. This way you don't get any unwanted flavor. Any wine, citrus or vinegar you use, will add flavor. Add your favorite "marinade" two hours before you cook your chuck steak. If you never have tried it, use some Liquid Smoke, for a hickory or mesquite flavor to any marinade you use.

Tender chuck roast in crockpot?
Q. I know a roast makes its own gravy, but I also have a special recipe I use with 1 cup of beef broth and pour over the roast. It's been cooking on low for about 2 hours and the gravy hasn't covered the potatoes and carrots yet. I'm letting it cook overnight so should I just wait til the morning to see if it makes more gravy on its own or add more beef broth right now? I don't want the gravy to be too watery.
Asked by Allie - Thu Dec 22 02:30:50 2011 - Cooking & Recipes - 3 Answers - Comments

A. I would add some more liquid. Even if the potatoes and carrots do end up tender and cooked, if they aren't covered in liquid they are going to be wrinkly and dry instead of moist. You can always add more flavor to the gravy (or thicken it up with a cornstarch slurry) tomorrow. Crockpots don't lose any moisture (unless you have an old one with a poorly fitting lid in which case throw it away and get a new one) so the roast should produce its own liquid. But the quantity of liquid also depends on the meat. If there isn't much fat on the meat it isn't going to produce much, so I would suggest you add another cup of broth.

A. depending on the weight, cook times will differ, I like to slow cook mine with a bit of butter in the pan in the oven @ 250 for like an hour, but only after searing it in the pan on high to lock in the juices and seal in the flavor. ps I flip twice: 20 mins. in, once over, baste, then in about 5 minutes before it's done, flip again to finish off the top of the side that's been "under" and again, I baste. ppss to get that grill charred flavor sometimes I finish it off under the broiler for a few minutes.

How long do I cook my chuck Roast in the crock pot?
Q. It is 2.12 lbs Tender Chuck Roast, I seared it already and put in on top potatoes, carrots, and onions.I put in a cup of water and some seasonings. I put it in my Crockpot 1:30pm EST time and would like it to be done by 6:30 to 7pm tonight. Should I cook it on low for 5 hours or high or a combo of both. Thanks
Asked by Sarah H - Mon Jan 24 13:37:16 2011 - Cooking & Recipes - 6 Answers - Comments

A. Cook on high for the first hour and allow to cook for a further 3 1/2 hours on low. Remove from stock and allow to rest sealed in foil for the remainder of time available (1/2hour). However, you may find that the carrots and potatoes are not soft unless you have julienned the carrots and par boiled the potatoes for 10 minutes in advance!!

A. put it under some cling film then slightly flatten it by hitting it with a rolling pin (or bottle). Season with salt, pepper and a pinch of sugar (yes really sugar) and a drizzle of red wine if you have it. Leave this in the fridge for 45 mins then pan fry.

A. Sear your chuck roast on the stove top on all sides with a bit of oil, then put it in your crock pot. Add baby carrots, quartered potatoes or small red potatoes, quartered or pearl onions, and pieces of celery. Add beef broth until just barely covered. (You can use bullion too) I add a tbs of worcestershire sauce, pepper, and parsley. I don't put in a lot of salt because of the broth. Cook overnite on low or 6 hours on high. You can make gravy with the broth when it comes out if you wish.

A. It is a tough steak. I have one of those spring loaded multiple knife deals I use on tough cuts, it works quite well. The basic chuck steaks you see more often now are better than the chuck tenders. Chuck tenders are more for making things like chicken fried steak, swiss steak, and the like.

Q. I'm making beef and noodles for supper tonight. I'm going to slow cook the chuck roast all day in cream of mushroom soup so it gets nice and tender. Do I need to brown it in a skillet first?
Asked by happymommy - Sat Aug 30 09:52:17 2008 - Cooking & Recipes - 9 Answers - Comments

A. You should. The "science" in it is that you essentially establish a chemical "scab" by searing the meat (fat sides first) , thereby locking in all juices so it will be that much more tender. Plus it brings some of the mass up to temp for the crockpot. While you are searing the meat, do not be afraid to carmelize some onions for a sweet, oniony flavour.

A. The chuck cut will always be a bit tougher than the others on a cow. But for my money it is also the best tasting steak there is. You can tenderize them yourself with a meat hammer or the edge of a plate. or you can squeeze kiwi juice or papaya juice on it and marinate it for 1/2 hour before you cook it. I fry mine hot and fast. Dont toss the steak just because its a bit chewy. Cut it into long strips and stir fry it with mushrooms and ansparagus or cube it and sprinkle it on a salad or make bigger cubes and eat it cold with good english mustard on a toothpick.
