How to make chicken gravy?
Q. I would like to make a chicken gravy or a reduction of some sort, but I don't have a package of chicken or turkey gravy mix nor do I have any chicken broth or chicken bullion cubes. I am making stuffed chicken breasts with mashed potatoes tonight, so there will be no grease or runoffs from the chicken since I'm using breasts. Suggestions? ~~

A. In order to have real gravy [not the package crap] you need to fry the chicken for a few minutes prior to baking...This will brown the chicken and give you a base to work with...remove chicken and add flour a little at a time until all the drippings are absorbed let it brown for a few minutes... gradually add milk until it reaches the consistency you want and then simmer for a few minutes...

A. I use that in chicken soup and Mexican rice... Add about 2 tablespoons of oil to a large frypan..add about a cup of rice, toast the rice in the oil stirring so it wont burn, add some chopped onion and garlic to the pan saute for a minute or so...add about 2 cups water to pan and about a 1/4 cup or less ,depending on taste, of the boullion. and a 1/2 teaspoon of cumin. stir and let sit and simmer til the water evaporates. its really good.

A. dice onions, carrots and celery. Brown in a soup pot using a bit of oil or butter. Brown very well. Add diced raw chicken and brown that. Add garlic, and bay leaves, water, salt, pepper, a bit of thyme if you like, some parsley and simmer for an hour. Taste. Add more salt and pepper if needed. Add noodles and cook them right in the broth. You just made your own broth by doing it this way. Yes, it won't be as flavorful as if you had broth or the bullion cubes but I bet it is pretty darn good.

Q. i want to make dog treats but i dont have chicken broth... so anyone? maybe a vet know?! they are low sodium! sorry i meant to add that-_- id boil chicken...but don't have any.. well...i was gonna cook the bullion cube down into the broth and then add water. then freezer. it will make a nice yummi pup-cicle dhmcconniel for information. it is for my dogs. i noticed my pups like ice. so why not make something tastey for them? i know my pups aren't toys, and i don't treat them like they are!

A. If you want to speak to a vet why don't you call one at a local animal hospital? The only people on here are animal lovers who have experience with dogs. If you aren't sure if its good for them- or even if it IS if it will upset their stomachs because it is new- then I would avoid it.

A. That's how you make chicken bouillon; cans & cubes are short-cuts. I always add onion, celery, & carrots, anyway; sometimes a bay leaf.

How to make chicken soup using left over chicken breast?
Q. I have some left over chicken breasts I originally cooked the chicken to make enchiladas & taquitos & now I wanna use the left overs to make some chicken soup. I looked for some recipes online but all of them involve using a chicken carcas & boiling it down then draining it ect ect... I don't wanna do that cause I don't have a carcas or bones. I took off all of the bones from the breasts & threw them away. Also I have the broth that I cooked the chicken breast in. All I did was boil the chicken in water & some seasoning salt until the chicken fell apart when I put a fork to it. So my question is can I use that chicken broth to make the chicken soup or should I start with fresh water & seasoning maybe seasoning salt… [cont.]

A. I make this short cut version of chicken soup all the time: Save the water you cooked the chicken in and add it to your broth. Saute your onion and celery until tender, add to broth along with carrots and potatos if you prefer them over noodles. Simmer until veges are tender and season to taste. Add chicken. If you prefer rice, cook it ahead of time and add it toward the end. A good squeeze or two of lemon will give you a nice flavor. If you prefer the lime, add some coriander to the blend for a more Southwest flavor.

Think this would work for a basic chicken soup?
Q. I bit my lip and now I've got a really sore...sore. I've dreaded eating because every time I do I bite my lip again! I need something that I don't have to chew much...and preferably something that would be somewhat soothing. So I was thinking chicken soup: the perfect sick food! I don't have many ingredients or much money to get more but here's what I was thinking. Dice 2 potatoes really small (like hashbrowns) Dice 1/3 onion really small 1/2 cup of rice 2 chicken bullion cubes 2 lemons Dried parsley I was going to saute the potatoes and onions until they were browned and carmelized. Then add the water, bullion, parsley, and rice. Cook until rice is done. Salt and pepper to taste. Add lemon juice to personal serving. I want this to be… [cont.]

A. Unlike apparently most people who responded, I like a little bit of lemon. I may add some actual chicken to the soup, (it is chicken soup after all). I also like to sprinkle a little parmesan cheese on top. The subtle saltiness and the flavor it creates will add body to the brothy soup. A little bit of butter will also accomplish this, but not as healthy. I hope this helps.

Can someone give me a little advice about how to keep my chicken or beef bullion cubes from becoming damp?
Q. and sticking to the paper they are wrapped in? I live in the south where it is very humid. My mom use to say put rice in the salt shaker to keep the salt flowing good. So I was wondering if that might work in my bullion cubes? Absorb the moisture?

A. I always keep mine in the freezer, and in the package (just so they'll last a long time). I don't use them often though, and then only the Knorr Veg. ones for bean soups, so don't want to have to worry about not having them when I want. If I need only half a cube, it's pretty easy to cut one in half after unwrapping even when it's "frozen" since they won't get as hard as ice/etc. Or you could just leave one or a few out (all the time, or for an hour or so after removing from the freezer). They'll probably last a long time in the frig too, but the freezer should be even longer. (Bouillon cubes do contain a *lot* of salt though, and salt is a natural preservative.) Diane B.

A. I've been in the same predicament many times! I have strained cans of soup, adding water to the concentrated ones. I have opened boxes of rices mixes ( like rice a roni) and diluted the seasoning pack, then strained that, since they are mostly bullion. I have even used the seasoning pack from boxes of stove top stuffing and hamburger helper.
