Chicken Bullion Answers
Im making chicken soup, so can you give me suggestions?
Q. I am boiling the chicken on the stove now. I put about 6 cups of water in along with 6 chicken bullion cubes. I have a bag of peas, some celery and some medium noodles in my Oxo. I think I will borrow some carrots from my sister in law. When its finished I will take the skins off the chicken, cube it up and put in some spices such as parsley flakes and some pepper. What else goes into chicken soup?

A. dice onions, carrots and celery. Brown in a soup pot using a bit of oil or butter. Brown very well. Add diced raw chicken and brown that. Add garlic, and bay leaves, water, salt, pepper, a bit of thyme if you like, some parsley and simmer for an hour. Taste. Add more salt and pepper if needed. Add noodles and cook them right in the broth. You just made your own broth by doing it this way. Yes, it won't be as flavorful as if you had broth or the bullion cubes but I bet it is pretty darn good.

Why do alot of Vegetarians like to have (Beef/Chicken Bullion) as an additive to taste like Meat?
Q. I thought that the reason/s why Vegetarians go Vegetarian is to stay away from Meat/s. So why do some Vegetarians like the taste of Meat?
Asked by rumeoui - Sun Feb 12 17:43:02 2006 - Cooking & Recipes - 2 Answers - Comments
A. A lot of vegetarians eat that way for health or ethical reasons. They do not neccessarily dislike the taste of meat but don't want the cholesterol etc. and/or don't want to cause animals to suffer. There are bullion type flavorings that taste like meat but have no meat products in them. There are many different degrees of strictness of vegetarians from people who eat meat but only sometimes to people who do not even wear leather nor eat any animal products at all, not even honey because it is made by living beings.

A. Most grocery stores carry bouillon in this form. It should be in the soup aisle. Hispanic food markets carry a brand called Knorr Swiza that is particularly flavorful.

A. In a spanish rice recipe, the saffron powder, chili powder, and the cumin is what gives the rice it's flavor. So without that in there, your recipe is going to taste a little bland. What are some of the spices that you have on hand and maybe I can help you figure out something to cook...please email or im me at angel_

A. You can, but know that the ramen packets have more seasonings and a ton of salt, so don't season your cooking until after you've tasted it with the packet poured in it.

What kind of spices can I use to replace chicken broth?
Q. I don't have any chicken bullion or broth. No beef or veggie bullion or broth either. Any spices I can add to the water in my udon pot to make up for the chicken broth or do I have to go buy some for it to turn out ok? Thanks! And yes, this probably sounds like a stupid question but I don't cook much lol.

A. onion powder, garlic powder, parsley, salt and pepper in the correct amount of water will get you close. just add the spices and salt easy, taste and adjust as you go to avoid over spicing. In a pinch, if you have it, I have taken the flavor packets out of ramen noodles and used them. They are pretty salty so always add just a bit and taste.

A. STOCK: Chicken stock tends to be made more from bony parts, whereas chicken broth is made more out of meat. Chicken stock tends to have a fuller mouth feel and richer flavor, due to the gelatin released by long-simmering bones. BROTH: Canned low-sodium chicken broth is the busy home-cook's best friend. If you've got an extra few minutes, enhance its flavor by adding any combination of the following and simmering for as long as you can: carrots, onions, leeks, celery, fennel, parsley, bay leaf, black peppercorns, or garlic. That'll help the flavor tremendously. Enriching store-bought broth still won't give you the full stock experience, but unless you're making something like chicken noodle soup, where you really do want the stocky mouth… [cont.]

Help me with Chicken and Dumplings recipe?
Q. My mom makes them so good, but I never learned how. She would use chicken (of course) Jiffy mix, and chicken bullion cubes, I cant find a recipe that comes close to hers, anybody know? Thank you, but how much water do i use??

A. I personally do not like bullion in anything. Just boil the chicken in water with a can (or two) of chicken stock (you can buy it at the grocery store) ... after the chicken starts falling off the bone - remove the bones and make the chicken pieces smaller. Mix up your Jiffy Mix (that's what I use) and drop it by small spoonfuls into the boiling water/stock (with the chicken still in it) - kinda stir it around - cover it and lower the temperature. Be sure to salt/pepper to taste. I think this is the best recipe - for me anyway.

Q. MSG is now a listed as two separate ingredients Disodium guanylate and Disodium inosinate. I'm trying to find a brand of bullion that does not have any of these ingredients listed. A. All Knorr stock cubes are MSG free across the range. Another good one is Kallo, even these are widely available and in every British Supermarket. It's mainly OXO and own brands that you have to avoid.

Can someone give me a little advice about how to keep my chicken or beef bullion cubes from becoming damp?
Q. and sticking to the paper they are wrapped in? I live in the south where it is very humid. My mom use to say put rice in the salt shaker to keep the salt flowing good. So I was wondering if that might work in my bullion cubes? Absorb the moisture?

A. I always keep mine in the freezer, and in the package (just so they'll last a long time). I don't use them often though, and then only the Knorr Veg. ones for bean soups, so don't want to have to worry about not having them when I want. If I need only half a cube, it's pretty easy to cut one in half after unwrapping even when it's "frozen" since they won't get as hard as ice/etc. Or you could just leave one or a few out (all the time, or for an hour or so after removing from the freezer). They'll probably last a long time in the frig too, but the freezer should be even longer. (Bouillon cubes do contain a *lot* of salt though, and salt is a natural preservative.) Diane B.
