Is it safe to eat the vegetables used to make chicken broth?
Q. I made homemade chicken broth (using a whole raw chicken and veggies) and it seems like such a shame to throw away all those veggies that were in the broth. I am planning on using the onions, carrots and celery in a compost bin. My questions are: 1: is it okay to eat (or freeze for later use) some of the carrots after the stock is finished or no? 2. Can the chicken bones be used for compost too?

A. The veggies probably are way overdone and my guess is that they sacrificed all their flavor to the broth. Nice idea not to waste though. Maybe you can smash them up into mashed potatoes or rice if you really must use them further. But by the time they have been used for broth, they are well used! You shouldn't compost the veggies or the chicken bones, though. The bones are meat products and will draw maggots and contaminate it with harmful bacteria. The vegetables, having been saturated in chicken juices, will now do the same thing. This isn't the kind of decomposition that you want. Only clean vegetable trimmings and other plant based products should be used. No butter, no eggs, no dairy. No meat or any other animal derived products, or… [cont.]

Can I make Chicken and Noodles with vegetable broth instead of chicken stock?
Q. I have the noodles and I'm going to put chicken in but I don't have chicken broth or bullion cubes. I do, however, have veggie broth. Can I use this instead and do i need to add anything else to it?

A. You can but the taste will not be as good. Why not sub it with chicken powder or cubes or the other chicken flavoring that comes in a jar that you add water to?

How much chicken broth to give 30lb dog?
Q. My 30 lb Labradoodle has had diarrhea for a few days, so the vet suggested that we feed her chicken broth and rice at a 2:1 ratio for a few days. She usually eats twice a day, so how much chicken broth (1/2 cup? 1/4 cup? 1 cup?) do we give her per meal? Thanks!

How does chicken broth taste when put with beef in a crockpot?
Q. I woke up and was getting ready to make a beef roast. Unfortunately when I went shopping I only grabbed chicken broth to go with my crock pot meals. So I put the chicken broth in with the beef roast and am wondering if anyone else has made this blunder, and if it's going to hopefully taste good in a number of hours when the roast is done. Either that or did I waste the roast by putting chicken broth in instead of beef?

A. Oh! I actually do that on purpose =) Chicken broth doesn't add any weird flavors, in fact to me it tastes better. I think it's something to do with the underlying savory broth flavor of the chicken that really adds to the taste of the juices. I've never put in beef broth. Additional tips: What you can do is also add in an 8 oz. packet of dry Gravy Mix, 8 oz. packet of Italian Dressing, and an 8 oz. packet of Ranch Dressing. Mix all three powders together in a bowl and then sprinkle it on all sides of the beef roast after it' in the crock pot. Then add 1 chopped onion and your can of chicken broth. This is for a 3 - 3.5lb roast. SO yummy... I wish I had some right now! :D

A. stock is generally made from bones, broth is generally made from bones and meat (ex. like a whole chicken). stock has a richer, stronger taste and feel in the mouth because the gelatin released from the bones in the cooking process provide a heartier body to the liquid. one day buy yourself some chicken necks, backs and wings bring them to a boil and skim the foam that rises to the top and discard it. reduce the heat to a simmer and add carrots, onions, celery, leeks, parsley, garlic, fenugreek... anything that you fancy in your stock... salt and pepper corns and a bay leaf if you like. simmer this for a long time, about 5 or 6 hours. strain it and and save it in one or two cup servings in a zip lock bag and freeze it, you will have it on… [cont.]

Chicken broth that expired last November, can I eat it if boiled?
Q. I have a box (not a can) of Swanson chicken broth that expired last November. The box seemed to be in normal condition, and I want to use it in a recipe that calls for me to boil it. Will it be safe? I poured it in to a glass and it has no smell at all. Hahaha, I cut open the box because that scared me, and it's just silver, no mold.

A. Expired a year ago? You can put anything you want in your mouth and boiling it will certainly help kill anything in there but why not just throw it away? A trip to the store beats food poisoning hands down every time.

A. Sure why not, its better then sauteeing in butter, and healthier, just make sure you sautee the firmer ones longer then the less firm, like the tomatoes and shrimp would be the last to go in.

A. If given the choice, I would choose boxed chicken broth such as Pacific Organic Chicken Broth or Kitchen Basics Natural Chicken Stocks. They come in a 32 ounce box and can usually be found on the soup aisle at the grocery store. Here is my take on Chicken Broth and Chicken Boullion: Bouillon: Many recipes call for bouillon cubes or granules. Although I used these products in the past, I never really cared for their artificial taste. I have found a similar product that I love, Better Than Bouillon, concentrated stock base. It is high in sodium, so I use it sparingly. It really gives sauces and gravy a nice depth and I often use this in place of or in addition to salt in a recipe. A. Well, a pretty common method of making broth is to cook chicken in water and use that water to make broth. So yes. I'd cook the water a bit, if you're worried about it.

Would adding chicken broth while baking a chicken ruin it?
Q. I was thinking of taking tin-foil and making almost like a bowl out of it and placing a boneless chicken breast inside of it. Then pouring a little bit of chicken broth to not make it as dry. A. For baked boneless chicken breast, I would cook it at a high temp (around 425 degrees F) close to the heat. (Broil if you have that option) Season it with your favorite herb and spice. Don't over cook the chicken. 14 minutes max. 7 minutes and turn it over. Then when you pull it out of the oven. Stab it with a fork several times and place it in the stock or broth. As it starts to cool it will pull the stock into the meat and make it really juice. (you only have to let it set in the stock briefly 2 minutes max) Roasted chicken herb recommendations: rosemary sage thyme cracked black pepper sea salt Hope this helps. Chef Monty

A. I would suggest boiling the chicken with 2 cups each of chopped, celery, onion and carrots. Also, some parsley ana a bay leaf. Yes, salt and pepper too. after a couple hours, you will have a wonderful stock that can be used of the broth on your corn chowder.

A. Chicken stock is made from bones, gelatinous bones to be exact. so, when compared to broth, it's going to give your sauce alot more body. It also is much lower in sodium, so also take that into account when making what you're making. if it calls for stock, and you're going to use broth, cut down on the salt. chicken broth is made using not just bones, but meat also. you could easily substitute, just cut back on salt, and thicken your sauce up a little more at the end.
